Hi all ! Baru nongol lagi nih di dunia Kaskus. Kebetulan lagi ada luang waktu hari ini, iseng pengen main2 lagi di Kaskus setelah berapa taun ga muncul disini. Dulu aku lebih aktif nongol di subforum ttg hewan peliharaan (doggie), kadang suka muncul di subforum ini juga. Cuman jarang banget nongolnya hehee.
Disini aku pengen share foto2 pemanis2 lidah hasil buatan sendiri nih
Ya, semoga suatu saat bisa punya resto/cafe/cakeshop sendiri

Hey all, this time ak mau share recipe untuk Tiramisu Chocolate Mousse cake. Request ini based on:
Di cake ini aku pake 2 different recipe sources. Jadi kemungkinan ada yg kelebihan dikit sisanya. Waktu aku bikin sih, adonan tiramisu chocolate mousse nya kebanyakkan kebanding ladyfinger nya hehe. Tapi gpp, makan lgsg kek gtu juga enak !

TIRAMISU CHOCOLATE MOUSSE CAKE

Ladyfinger Sponge:
4 eggs, separated
2 tbsp + 2/3 C white sugar
1 C all-purpose flour
1/2 tsp baking powder
1. Preheat oven to 205 C.
2. Line two 17 x 12 inch baking sheets with baking parchment.
3. Fit large pastry bag with a plain 1/2 inch round tube.
4. Place egg whites in a bowl and beat on high until soft peaks start to form.
5. Slowly add 2 tablespoons of the sugar and continue beating until stiff and glossy.
6. In another bowl, beat egg yolks and remaining sugar.
7. Whip until thick and very pale in color.
8. In a small bowl, whisk together flour and baking powder.
9. Fold half the egg whites into the egg yolk mixture.
10. Fold in flour, and then add the remaining egg whites.
11. Transfer mixture to the pastry bag and pipe strips that look like ladyfingers and 2 round shapes (about diameter of 20cm) onto the prepared baking sheet. 12. Bake for 8 minutes.
Tiramisu Chocolate Mousse:
300gr dark chocolate, broken into small pieces
6 tbsp espresso coffee, or strong regular coffee
3 tbsp unsalted butter
6 tbsp Marsala wine (may sub with rum, or omit)
6~7 egg yolks
60gr sugar
100g mascarpone cheese
525gr heavy cream, whipped
1. Boil water and put to simmer, place a stainless steel bowl on top (this is called, Double Boiler).
2. Put the butter, espresso, and the chocolate onto the bowl, let the chocolate melt on the lowest heat of the double boiler for about 3-4 minutes. And stir with whisk. Remove from heat, and set aside.
3. On a new stainless steel bowl, on top of the double boiler, put Marsala wine, sugar, and egg yolks. Set to medium heat, and start whisking vigorously until frothy and thickens.
4. Turn the heat off, and add Mascarpone cheese. Whisk until well-blended.
5. Pour the chocolate mixture onto the Mascarpone mixture. Mix well and set aside to cool down. (This is already a Tiramisu Chocolate mixture)
6. Whip the cream until firm peak.
7. Fold the cream to the Tiramisu Chocolate mixture in 3 batches. Fold gently, so that you don't lose the aeration of the whipped cream.
Coffee Syrup:
200gr Sugar
200ml Water
Espresso and Kahlua to taste
Assemble:
1. Place the round ladyfinger sponge, circled with acetate.
2. Brush coffee syrup to the sponge, and fill up with mousse.
3. Place another sponge on top of the mousse, and brush it with coffee syrup.
4. Fill up with mousse.
5. Put in the freezer to set.
6. When it's set, remove the acetate and stick the ladyfinger strips on the side of the cake using the leftover mousse.
7. Dust with cocoa powder on top.
